Pastry tradition

To this day, Austria’s pastry and dough cuisine is in a league of its own – thanks to the sheer variety of flavours and unique presentation of the dishes. From dumplings and strudels to pancakes, fine desserts are at the heart of Viennese culinary tradition.

The history of Viennese pastries dates back to the days of the Austro-Hungarian monarchy. It was during this period that Viennese pastries really came into their own, increasing in popularity with each passing year – thanks in no small part to the unique composition of Bohemian, Moravian, Hungarian, French and Italian influences. Viennese confectioners did what they do best and created a completely new – and quintessentially Viennese – pastry tradition.

Changing tastes have always been shaped by the prevailing trends of the day. As individual elements were refined, the quality and appearance of the dishes went from strength to strength.
