Kipferlkoch / Austrian Bread pudding

Ingredients:

8 sweet bread rolls / slices of sweet bread (Kipferl)

500ml Milch

100g Butter

80g caster sugar

Pack of vanilla sugar (or vanilla essence)

Finely grated lemon

3 eggs

150g quark (sweet curd cheese)

50g raisins

2 medium apples (peeled and finely cut into slices)

Cinnamon

Cut the sweet bread into slices and soak in milk.  Take half of the sugar and mix with butter, vanilla sugar and lemon peel until fluffy.  Gradually add the egg yolks and mix with the quark. Add this mixture to the sweet bread. In another bowl, whisk the egg whites with the remaining sugar until firm and add to the mixture with raisins.  Peel and cut the apples into slices.  Line a baking tray with butter and sprinkle with sugar. Add half of the mixture. Place the apples on top of the mixture and then add the rest of the mixture. Bake in a preheated oven (180°C) for around 30-35 minutes.
